Caramel & Ganache Apples (Chef Ian Florance)
Brown Butter Caramel
½ lb butter
2 cups heavy cream
1.5 cups sugar
Add butter to medium size sauté pan. Allow the butter to melt, and continue cooking on medium heat until it starts to brown. Once the butter has browned, whisk in the heavy cream. Once the cream, and butter mixture starts to come to boil, whisk in the sugar. Cook until all the sugar has completely dissolved.
Vegan Chocolate Ganache
1 lb dark chocolate
1 cups soy milk
¼ cup food grade coconut oil
Using a double broiler method (This is when you have a sauce pan on the stove top with hot, nearly boiling water, and a large metal bowl with your ingredients in it, using the steam from the water as your heating element). Add your ingredients to the metal bowl.
Set the bowl on top of the sauce pot. When you notice the chocolate starting to melt, use a whisk to mix all your ingredients until you have a smooth consistency.
