Creamy Roasted Garlic Sweet Potato Salad

Serves 6-8

  • 3 large sweet potatoes, peeled and cubed about 1”, roasted 30 minutes @ 400 degrees
  • 12 cloves garlic, roasted in olive oil
  • 1 small red pepper, finely diced
  • 1 large celery stalk, finely diced
  • 3 large scallions, thinly sliced
  • 1/3 cup chopped walnuts
  • 1/3 cup golden raisins (or cranberries)
  • 2 Tbsp chopped fresh chopped parsley
  • ½ cup whole milk plain yogurt or more as needed
  • 1 tsp salt
  • Ground black pepper to taste
  • Directions:

    Combine vegetables, raisins and walnuts in a large bowl. In a food processor, add yogurt, roasted garlic, salt and pepper and blend until garlic is well incorporated. Toss well with salad mixture, adjust seasoning and chill before serving.
