The traditional marinade for the famous Cuban roast pork, Mojo Criollo is also a great marinade for grilling chicken, beef, cold-water fish, shrimp, and veggies!
- 1 qt. sour orange juice from Seville Oranges (substitute 2 cups fresh orange juice mixed with 1 cup each of fresh lemon and lime juices)
- ½ cup Olive oil
- ½ cup Minced garlic
- ½ Pureed yellow onion
- ¼ cup Ground cumin
- 1 Tbsp. Kosher/Sea salt
- 1½ tsp. Freshly ground black pepper
- ½ cup Finely chopped fresh cilantro (include stems)
Combine all ingredients until well-blended.
