Grilled Corn & Tomato Salad

(Gluten-Free, Dairy-Free, Nut-Free, Vegan)

Ingredients:

  • 3 ears of Corn, shucked
  • 1 cup Cherry Tomatoes, halved
  • 1/4 cup Red Onion, diced
  • 1 Hass Avocado, diced
  • 1/4 cup chopped, fresh Cilantro, packed
  • 1 Tblsp Madhava Light Agave Nectar
  • 1/2 cup Rollin’ Oats Organic Extra Virgin Olive Oil
  • 1/4 cup Lime Juice
  • 1/2 tsp Cumin
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper

Directions:

  1. Heat a grill to medium-high heat.
  2. Brush shucked corn with olive oil & sprinkle with salt and pepper.
  3. Place corn on grill, turning periodically with tongs until lightly charred, about 30 minutes.
  4. Allow corn to cool and cut away from the cob.
  5. Put corn, tomatoes, onion, cilantro, & avocado in a bowl.
  6. In a separate bowl, whisk together agave, oil, lime juice, cumin, salt, & pepper.
  7. Pour dressing over corn mixture & gently toss to combine.
