Baked “Fried” Chicken

Ingredients:

  • 2/3 cup Gluten Free instant oats
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 1/2 tsp Paprika
  • 1 1/2 tsp Italian Seasoning
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 lb Boneless Skinless Chicken Breasts
  • 2 Tblsp Dijon Mustard

Directions:

  1. Preheat oven to 400 degrees F.
  2. Spray a baking sheet with non-stick cooking spray.
  3. In an 8×8 pan, combine oats and seasonings.
  4. Brush each chicken breast with mustard and dredge in oats mixture until evenly coated.
  5. Place on baking sheet and bake about 30 minutes, until cooked through.
