Pineapple Coconut Rice Pudding

Ingredients:

  • 1 cup Long-Grain White Rice, cooked
  • 3/4 cup Sugar
  • 16 oz Coconut Milk
  • 1 Tblsp Cornstarch
  • 3 large Eggs, beaten
  • 1 tsp Vanilla Extract
  • 1 (15 oz) can Organic Crushed Pineapple, liquid reserved
  • Unsweetened Shredded Coconut, for garnish

Directions:

  1. In a large bowl, combine cooked rice, sugar, & coconut milk.
  2. Stir in cornstarch, beaten eggs, vanilla extract, & pineapple.
  3. Place in a 4-5 qt. slow cooker & cook on low 2-3 hrs.
  4. Serve garnished with shredded coconut.
