This Mediterranean Watermelon Salad is incredibly refreshing! It is great to have as a snack or serve as a side dish at a BBQ. Watermelon feta salad is quick and easy to make. We recommend adding the feta on top as it is served, otherwise it can get watered down in the dressing. This sweet and tangy combination of flavors will be sure to cool you off on a hot day, making it ideal for a summer picnic or BBQ.
What You Will Need
(Serves 4 – 6)
½ | 10-12 lb. watermelon, well-chilled |
2 Tbsp. | Honey |
¼ cup | Fresh lemon juice |
2 tsp. | Kosher salt |
1 tsp. | Freshly-ground black pepper |
¼ cup | Coarsely chopped fresh mint leaves |
½ cup | Crumbled feta cheese |
How To Make It
Trim off the rind of the watermelon to the red flesh, cut it in half crosswise, and refrigerate one of the halves. Then, cut the other watermelon half crosswise into 1½-inch rounds. If the watermelon has seeds, use a paring knife to cut a circle in each round along the seed line; remove the center, scrape out all seeds, and cut into 1½-inch cubes.
Combine the honey, lemon juice, salt, pepper, and half the mint in a large mixing bowl and mix. Add the watermelon cubes and toss well. Next, transfer to a serving platter, garnish with the crumbled feta and the remaining chopped mint and serve.
